Chef Aaron Patin signs on at Stone Creek Coffee

Stone Creek Coffee Roasters has hired Chef Aaron Patin as executive chef of the Stone Creek Kitchen.

Patin, formerly of the SURG Restaurant Group, will create homemade food items for the soon-to-open kitchen.

Scheduled to open later this summer in the Downtown Milwaukee roasting facility, the kitchen will create products for all eight of Stone Creek Coffee's local retail stores.

SURG's Kurt Fogle

If you haven`t had the pleasure of meeting Chef Kurt Fogle, pastry chef for the SURG Restaurant Group, it`s tough to describe what a massive repository of pastry knowledge exists in the brain behind his unassuming baby faced exterior. But, suffice it to say, Fogle is a force to be reckoned with.

Kohler's Paul Smitala

If you`ve sampled the dishes at Kohler`s Blackwolf Run Restaurant, 1111 W. Riverside Dr., you can attest to Chef Paul Smitala`s talents in the kitchen. Like his restaurant, Smitala is a mix of feast and fun. Trained at the C.I.A., he can cook with the best, but he also likes to have fun. You can see it in his kitchen, where he utilizes a range of equipment he created by modifying power tools (my favorite is the potato peeler on steroids), and you can see it in his ongoing commitment to teaching kids the way around a kitchen.

Look around and you`ll see an endless resurgence of ancient foods and techniques that faded away, but that are quickly returning to the mainstream. One great example is artisan bread. Another is the art of pastry. Both are seeing a revival in Milwaukee, and there`s nowhere the trend is more evident than at Rocket Baby Bakery in Wauwatosa.

Last summer, Nell Benton of The National Cafe and Thi Cao of Buckley`s started discussing ways that they could bring together Milwaukee`s culinary community to benefit the community. After a successful charity dinner in October, Benton and Cao decided to begin holding similar dinners on a regular basis. And so, Milwaukee - Food For Thought was born.
